  1. Heat the paella pan with an olive oil layer in the pan. Add chicken once hot and fry for 15 min until cooked and browned. Move chicken to a bowl leaving the oil in the pan.
  2. Add chopped onion & chopped garlic to pan. After 5 min, add the diced tomatoes. After another 5 min, mash the tomatoes with the spoon or skimmer so they lose their shape. Add green peppers and let sizzle for a minute. Add rice to the pan and spread it around. Make sure the rice is coated in a layer of olive oil (add oil if needed). This helps the rice maintain its shape while cooking. Add chicken and broth.
  3. In a mortar, mash a pinch of garlic, parsley and saffron with a little bit of salt. Optional is addition of ground cayenne pepper to the mixture (+/- 1/2 table spoon). Use a few spoonfuls of warm water to collect the mashed spices in a bath. Spill the mixture on the paella pan and shake the pan so it spreads throughout.
  4. After about 5 min, decorate the paella with the the peas and then push the red pepper ribbons on top. Cook until the broth is reduced by half and the rice is still firm but not done. The rice will continue to cook after being removed from the heat.
  5. Tip: Always spread out contents of the pan and fully utilize the space so everything cooks together. Shake the pan for moving contents around. Rotate the pan as needed over the heat.

    1. Preheat oven to 350.
    2. Cook pasta according to package directions, omitting salt and fat. Drain and keep warm.
    3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Remove casings from sausage. Add sausage to pan; cook 2 minutes, stirring to crumble. Add bell pepper and next 6 ingredients (through salt) to pan; saute 6 minutes or until bell pepper is tender. Stir in tomato sauce. Reduce heat, and simmer 5 minutes.
    4. Add pasta to pan, tossing gently to coat.
    5. Spoon pasta mixture into an 8-inch square baking dish coated with cooking spray. Stir in mozzarella and goat cheese; sprinkle with Parmesan.
    6. Bake at 350 for 7 minutes or until bubbly and top is browned.

    1. In a greased 3 qt. (9x13) oblong baking dish, place 6 slices of bread. (Note: original recipe says to break up bread and spread in a 10x16x1/2" casserole dish. I use the Pyrex 3 qt. dish and do not break up the bread.)
    2. Brown sausage. Drain off excess fat. Stir in mustard.
    3. Spoon sausage evenly over bread and sprinkle with cheese.
    4. Combine remaining ingredients and pour over cheese and sausage.
    5. Allow to sit for a couple of hours or overnight in fridge.
    6. Bake at 350 for 25-30 minutes, until puffy and lightly brown.
    7. Refrigerate or freeze until ready to use. Defrost before baking.

    1. Preheat oven to 450 degrees.
    2. In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.)
    3. Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
    4. Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough.
    5. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting.
    6. Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

    1. Preheat oven to 375 degrees.
    2. Cream margarine and sugars. Add egg and vanilla. Stir well. Add remaining ingredients and mix well.
    3. Roll into walnut-size balls and roll in sugar. Bake 8 minutes at 375 degrees.
    4. Press Hershey's Kisses into center of each cookie. Bake 2-5 minutes longer.

    1. Preheat oven to 400 degrees F.
    2. Lightly grease a baking sheet. In a large bowl, combine the chicken and next 7 ingredients.
    3. Unroll 1 piecrust onto a lightly floured surface. Roll into a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining pie crusts.
    4. Arrange 1 round on a clean, flat surface. Lightly brush the edges of crust with water. Place 1 heaping teaspoon of chicken mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and chicken mixture. (Up to this point, the recipe can be made ahead and frozen for up to 1 month).
    5. Arrange empanadas on the prepared baking sheet. Bake for 15 minutes.

    1. Preheat oven to 350°.
    2. To prepare cake, coat 2 (8-inch) round cake pans with cooking spray. Dust pans evenly with 2 tablespoons flour.
    3. Combine 1 cup granulated sugar, brown sugar, and oil in a large bowl; beat with a mixer at medium speed 2 minutes or until well blended. Add egg substitute and eggs; beat until well blended. Add pumpkin, beating until blended.
    4. Lightly spoon 2 cups flour into dry measuring cups; level with a knife. Combine flour, baking powder, and next 3 ingredients (through salt) in a medium bowl. Gradually add flour mixture to pumpkin mixture, beating just until blended. Spoon batter into prepared pans. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes on a wire rack. Remove cake from pans; cool completely on wire rack.
    5. To prepare frosting, beat butter and cream cheese at medium speed until creamy. Gradually add powdered sugar, beating until blended (do not overbeat). Add juice, stirring until blended.
    6. Place 1 cake layer on a serving plate. Spread 1 cup frosting over layer, and top with remaining cake layer. Spread remaining frosting over top of cake. Sprinkle with pecans, and garnish with orange slices, if desired.
    7. Note: Pumpkin-pie spice is a combination of warm spices: cinnamon, ginger, nutmeg, allspice, cloves, and mace. Use it to enliven applesauce, vanilla ice cream, or tea.
