Sweet Potato Casserole

  1. Preheat oven to 350 degrees F.
  2. Boil sliced sweet potatoes in water until tender. Drain.
  3. In a large bowl, blend the potatoes until creamy. Stir in the margarine, brown sugar, orange juice and a dash of ground cinnamon (to taste).
  4. Spread the sweet potato mixture into a 9x13 inch pan. Sprinkle the mini marshmallows over the top and bak at 350 degrees F until golden brown.
